Shredded Pork… It’s what’s for #dinner.

It’s winter time and that usually means I’m neck-deep in utilizing my slow cooker. Since moving to the East Coast, I’ve found having a slow cooker is a necessity. (Or maybe it’s since I’ve become an adult??? Who knows.) I’ve made mashed potatoes in a slow cooker. I’ve made stews and pot roasts. I’ve even cooked a whole chicken in my slow cooker. The possibilities are endless.

However, my favorite thing to put in the slow cooker has to be pork. From BBQ pulled pork to carnitas, you can make so much magic happen with a slow cooker. Here’s my quick and simple recipe for carnitas-like pulled pork. It’s great for tacos, nachos, burritos, or even wrapped in lettuce. It’s smokey, and if you want to, you can throw in some lime juice for a little bit of citrus kick. It’s even Whole 30 and Paleo-friendly. What’s even better – you can put it in the slow cooker on a Friday or Saturday night and have it ready for you to munch on the day after all while watching your favorite sports team play. You can also plan ahead to have it for Taco Tuesday if you’d like. It’s super versatile. I’ve even used leftovers to make delicious omelettes. (Some eggs, salsa, carnitas, and avocado – then tada!)

Trust me. It’s that good and it’s that easy. So easy you might make it once a week.

Shredded Pork

  • 3-4 pounds pork butt roast – Sometimes I substitute boneless pork ribs
  • 2-3 tbsp of paprika – Enough to cover the entire butt roast
  • 1 small onion, sliced – I normally use white onions
  • 3-4 cloves of garlic, smashed – I personally add more if I want it garlicky
  • salt & pepper
  • 1 cup of chicken broth
  • Juice from 1 lime, optional

Directions
Let the fun begin! Rub the pork butt roast with paprika. (Rub a dub dub.) Make sure the roast is completely covered with paprika. Go ahead and salt and pepper the roast as well. Then throw the onions and garlic in to the slow cooker. (The onions and cloves should cover the bottom of the slow cooker.) Add the pork butt roast on top of the onions and garlic, then pour the chicken broth around the roast. Cover the slow cooker and let the roast cook on low for 8 hours. When the roast is finished, remove and shred the roast. Place the shredded pork back into the slow cooker. At this time, you can add the lime juice. You may need to salt and pepper to your tasting.

But that’s it! You’re done! Now, get to eating. Nom nom nom.
