Clean Eating

One of my coworkers the other day asked me what was for dinner. I laughed and shrugged at her. For almost a year, I’ve been using Instagram to post photos of my food. More precisely, my dinner. My infamous line, “It’s what’s for #dinner” has become my tagline. As my posts continued, my ever-changing cooking and eating preferences also continued. Most of my posts today consist of clean eats. And even though it’s a more healthful approach to eating, the love of my posts continue. People don’t think eating healthy can look good and taste good. But here I am, getting people to ask me what’s for dinner and how I plan on making it ‘clean’.

I don’t know, I think of it as a challenge. Want BBQ? Want nachos? Want rice? Well, okay, let’s try to make those. It’s one big cooking/baking experiment!!!

My favorite staple is guacamole. I make it often and always have some plantain chips around to dip with. Here’s the recipe:

Guacamole

  • 4 ripe avocados
  • 1-2 Tbsp of red onion, diced
  • 1-2 cloves of garlic, minced
  • salt and pepper
  • 2-3 tbsp of cilantro
  • 1 lime
  • 1 jalapeno (optional)
  • 1/2 tomato, diced (optional)
  1. Prep all the ingredients first. Dice the avocados for easy mixing.
  2. Mix in red onion and garlic. Then cilantro. If you’re adding jalapeno and diced tomato, ad that as well.
  3. Lastly, add lime juice, and salt and pepper to taste!

That’s it!!!! Simple and great tasting. ^_^ Who can say no to the amazingness of avocados??? No one… (I know this.)
